But it’s not because Dean punched him and he’s reacting to pain or momentum. 

If he really was reacting to the punch, his cheek would have a red mark on it, not to mention his entire face would wobble slightly as it moved.

But it doesn’t.

So the only explanation for what he’s doing here is saving Dean’s hand from breaking. Instead of acting like a concrete pillar and not moving an inch (like we all know he’s perfectly capable of), he’s turning his face, rolling with the punch, so that the momentum of Dean’s punch doesn’t turn back onto Dean’s knuckles and break them. You can see Dean in the last GIF is in a good deal of pain from just that, imagine how much more so he would be in if Cas hadn’t turned his head.
