Starfield gets a lot of flack on the internet. A lot. Some of it is deserved, but I can't recall any other game with a metacritic score above 80% that also attracts as much vitriol as Starfield does. But then again, Bethesda is my favorite game development studio of all time, so maybe I'm biased towards giving them more grace than most.
Irregardless, I had a lot of fun with Starfield! And I still pick it up occasionally. I made a character who I'm very happy with, and a ship I'm equally proud of.

I envision him as the consummate space trucker. A working man, reliable, and most of all, accustomed to the quiet isolation of a long haul through the empty void.
He's something of a nomad - never really fitting in with either the classist bureaucracy of the United Colonies, or the callus libertarianism of the Freestar Collective. He makes his home on his ship, and he wouldn't have it any other way.
He finds a lucrative shipping niche in delivering smaller payloads over longer distances - jobs which the larger freight companies wouldn't see as worthwhile. He prefers to travel with no crewmembers at all.
Of course, after taking a job to deliver one particularly peculiar artifact, he gets swept up into Constellation and all the drama that follows.
Despite himself, he makes fast friends with Barrett, and takes on Vasco as a permanent co-pilot and crewmate. He maintains good working relationships with Sarah and Andreja, but never really warms up to Sam, or to the prospect of bringing a child along on a ship prone to frequent firefights...
Eventually he enters the Unity and becomes a fully-fledged Starborn. He may still take the occasional delivery job, for old times' sake. But the Unity changed him deeply - as it would anyone else. His new purpose is to keep collecting the artifacts. Not out of desire for power, but to hopefully find whoever (or whatever) created the artifacts and the temples.
I gave him a new, alternate outfit post-Unity. Something that reflects his ascension as a Starborn, but looks a little bit better than the vanilla Starborn armors. Huge thanks to the modding community!

This build started as an early-game Econohaul, and slowly transformed into the beast it is now. With 13,800kg of cargo capacity (before Payload bonuses, etc.), it's definitely a long hauler's dream freighter. Complete with a decent living space for long voyages, and all while being able to pack a punch.
I definitely prioritized function over form, but I think it came out looking pretty decent anyway. And the utilitarian feel is fitting for what it's supposed to be. I'm very happy with it!
