Dehydrated fruits.
This process used when the purpose is preserve the fruits. This process modify the texture and flavor. They're used to garnish desserts, salads, or just eat it.
Ingredients:-500 ml 30° B syrup, 1 piece of diferents fruits (apple, pear, oranje, lemon, carambolo, vegetable paintings (for the diferents fruits). The last ingredient is optional.
Preparation: Cut the fruits on slices in a medium thickness, reserve by separate. Heat up syrup, divide according the fruits. In this step can painting the syrup accordign the fruits colors. Let cold , drain and extend them in a nonstick parchment paper or silicone mat to bake. Bake at 100°C (212 °F)  approximately 2 hours. (flip them to bake well after 1 hour).
