Peach charlotte..has little pears at the bottom right after the imbibing sugar that is placed on the sponge gateau but it had peach pureeā¦.i used fold in method because the whisking of egg whites causes volumeā¦ā¦.folding in the dry ingredients allows all the ingredients to be mixedā¦.not making the mixture to collapse. Again an arm exercise if a mixer is unavailable!!
