Homemade Mac and Cheese. INGREDIENTS: 2 cups dry macaroni noodles, 2.5 cups water, 1 Tblsp butter, 1 Tblsp flour, 1 cup heavy cream (or half and half or milk), 1 cup shredded cheese for sauce plus extra for topping, salt and pepper to taste. OPTIONAL: 1/2 tsp garlic powder, 1/2 tsp mustard powder or your mustard of choice, 1/4 tsp mild chili powder. Place noodles and water into a pot with a generous pinch of salt and turn heat to medium. Let noodles reach a gentle boil and adjust heat to let simmer until noodles are al dente. In a separate pot, melt butter and add flour. Stir with a whisk to combine to make a roux. Slowly add heavy cream and whisk to combine. Add seasonings and continue to stir. Add cheese and turn down heat to low. Stir until cheese is melted, and you are done with your cheese sauce. Drain any remaining water from noodles, and add cheese sauce. Plate and top with cheese if you desire.
