I think Sophie and Keefe are the type to enjoy the smaller things in life. I can imagine they would go to a human store and buy a cake and then eat the entire thing in the parking lot together, as a date. Or both going to restock Keefes art supplies. Dropping by each others house just to say hi or share a mundane fact or a random "i thought of you" or "this cookie is good you should try it." Keefe coming over just to help with chores, help make dinner. Calling each other to look at a sunset or a pretty flower.
They would definitely be a side quest kind of couple.
Things i wouldn't mind changing if there were to be a koltc adaptation
• the role of the Gnomes. How they're described and the things they do for the elves does make me pretty uncomfortable, and I think that could be redone.

•the all blue eyes (add some other bright colors dawg it's not that hard)
•dex's overall appearance (kinda, he just doesn't feel like a blonde, strawberry or not. I'm not too attached to the way he's described)

I can't remember if earrings were ever mentioned in KOTLC but I wonder how the elves would react to piercings. Like if you really think about it, it's a really brutal way to decorate yourself. at least if you're from a place where the sight of blood or wounds in general is so rare.
Imagine being a Foster like 2000 years into the future. Imagine inheriting the brown eyes too. A clear sign of being a descendent of the legendary Sophie Foster, the elf with five (+) abilities, who fought the neverseen, who was raised with humans.
Imagine just walking down hall the hallway of Foxfire, and land being greeted with eyes of scorn, jealousy, and admiration. Sophie Foster is now more legendary than Fallon Vacker. she and the others in her group are now very old and very pointy ears. They mostly stick to themselves but come into the open eye whenever the world needs help. 
Being a Foster is bigger than being a Vacker, it carries more weight. The weight of a young girl, forced into a destiny, a girl who changed the world.
With the end of the series coming near, I wonder what it will be like after everything is dealt with. If the neverseen will be fully defeated, how much respect will immediately be put on her name. We already know that if she marries Keefe, they're both keeping her name, so if they have kids, it's definitely getting passed down. I'm curious to see if we'll get like an into the future ordeal. But without a doubt, I can see Foster becoming one of, if not the most legendary last names known to Elven history.

“why does someone MATURE like katara fall in love with a CHILD like aang?” fundamental misunderstanding of katara’s character and her dynamic with aang. she was forced to mature because she lost her mom but she is still, at the end of the day, a fourteen year old child.
she falls in love with aang because he doesn’t just represent hope for the world but he also gives her back her lost childhood with his whimsy. she gets to be silly and childish with him and that’s so important for her.
this fandom tends to adultify katara too much. she’s literally a kid. and it’s okay for her to be.
Love when people complain about slow burns in their standalone novels/ trilogies and I'm in the corner, eye twitching, whispering about sokeefe, nearly at the point of a manic episode

I hate live action adaptations. Like don't tell me that people too stuck up to watch something animated and people too lazy to read a book get to have access to the "same" story in a more "Acceptable" format

I don't understand the point of having a currency in the lost cities honestly. If everyone is born with a birth fund of trillions of dollars that supposedly lasts forever because who needs that much money... then they're basically exchanging a currency worth nothing if you think about it. If everyone has that much money, then their currency is pretty useless. Am I missing something? Did Shannon explain this? I know that everyone has a job because it just needs to get done and they would have nothing to do if they didn't have jobs. Do they get paid? Why do they get paid if they already have that much money? Holy inflation??
