This recipe for Healthy Slow Cooker Lemon Garlic Chicken is great for days when you are busy and want a tasty and healthy meal that doesn't take much work. When you mix lemon, garlic, and herbs together, you get a dish that smells great and goes well with many sides. Plus, if you use a slow cooker, the chicken will always be soft and juicy.
Ingredients: 4 boneless, skinless chicken breasts. 4 cloves garlic, minced. 1 lemon, juiced and zested. 1/4 cup low-sodium chicken broth. 1 tablespoon olive oil. 1 teaspoon dried oregano. 1/2 teaspoon dried thyme. Salt and pepper to taste. Fresh parsley for garnish optional.
Instructions: Chop up the garlic and add it to a small bowl. Add the chicken broth, olive oil, oregano, thyme, salt, and pepper. Put the chicken breasts in the slow cooker and pour the lemon-garlic mixture over them so that they are covered all the way through. When the chicken is done, cover it and cook on low for 6 to 8 hours or high for 3 to 4 hours. Take the chicken out of the slow cooker when it's done cooking and shred it with two forks. Put the chicken back in the slow cooker and mix it with the juices. If you want, you can serve it hot with fresh parsley on top.
