These peanut butter balls don't need to be baked and are full of good things for you. They taste great as a snack or dessert. They don't need to be baked, are vegan, and don't contain gluten.
Ingredients: 1 cup rolled oats. 1/2 cup natural peanut butter. 1/4 cup maple syrup. 1/4 cup vegan protein powder. 1/4 cup ground flaxseed. 1/4 cup unsweetened almond milk. 1/2 tsp vanilla extract. Pinch of salt.
Instructions: In a large mixing bowl, combine rolled oats, peanut butter, maple syrup, vegan protein powder, ground flaxseed, almond milk, vanilla extract, and a pinch of salt. Mix well until all ingredients are fully incorporated and the mixture holds together. Using your hands, roll the mixture into small balls and place them on a baking sheet lined with parchment paper. Refrigerate the balls for at least 30 minutes to firm up. Once firm, store the balls in an airtight container in the refrigerator for up to a week.
