The wheel of countries I’ve been using from google gave me Iraq, and my coworker requested I try something from Cape Verde, so those are going to be my next 2 countries I try cooking for.

Khachapuri (Ajaruli style) with walnut salad
In the immortal words of Rook (Dragon Age Veilguard), all I needed to hear was bread and cheese and I’m sold.
This was an instant hit. There wasn’t a single complaint from my gaggle of picky eaters and my lactose intolerant sister ate an entire bread boat even though she knew she’d suffer for it. (She says that it was totally worth it though.)
The salad would have been better if we had known ahead of time that most of us are not a fan of cilantro 😅 but it would have been perfectly fine with just the parsley.
The khachapuri recipe I used came from a Reddit thread I can’t seem to find again but the one with the salad recipe I used looks good enough.

Chicken Tikka Masala with homemade Naan
Between the two recipes this meal was a lot of work but it was so worth it. I definitely need more practice making the naan but the tikka masala was perfect.
Store bought naan would totally be good enough for an easier time though.
Even better, the leftovers I brought to work today tastes even better so I’ll definitely be making an extra big batch next time.
The picky kid didn’t even want to attempt it though. She took one look at it and agreed with her European ancestors and said, “Nope, that’s too spicy.” (It really wasn’t, though 🙃)

Making bread 😋
Trying my hand at making my own naan to go with the chicken tikka masala I’m making for dinner tonight. Will see how this goes 😅
