here is three step process.

base local colors with some core shadows

adding more information with additional shadows and attention to color zones

refine

with refinement, stretch the values where applicable. how to know where applicable? it comes with experience. and, if you're ever unsure, use reference, that is how you will get the experience. analyze the reference, don't just copy it.

skin is not so high contrast. often i see in beginner artwork, they put too much contrast all over and in the skin. makes it look metallic.

they overstate their midtones

this, i strongly advise against. keep the values close, but deviate where it matters, like ambient occlusion spots or harsh form changes.

see how close the values are in the skin, and the darkest parts are where form shifts harshly + different value ranges for different local colors and materials. it is a lot you must keep track of, but it is intuitive eventually.
