I made cricket banana bread muffins! I used the cricket meal that we baked the other day and replaced a 1/4 cup of the 1.5 cups of flour the recipe called for. Turned out delicious! 4 over ripe bananas 3/4 cup white sugar 1 tsp vanilla extract 1 egg 3/4 cup melted butter 1 tsp baking soda Pinch of salt 1 1/4 cups flour 1/4 cup cricket meal Spices to taste -cinnamon nutmeg cloves (and I usually also add a dash of cayenne pepper, just for a little zing) Mix it all together adding the baking soda, flour, cricket meal, and salt last. Fall is upon us in #Youngstown. The weather is beautiful this week, though, as we prep for lower temperatures in the upcoming weeks.

This evening we experimented with making powdered cricket meal! Baked a pound of raw crickets at 350 F° for 35 min on a jelly roll pan - stirring it up every ten minutes so it didn't burn. We had to grind it in a coffee grinder because it was too fluffy for the food processor. Haven't weighed it again yet, but we got 1.5 cups out of 1 pound. Which will work great for adding to the banana bread I'm making. It can't be used as straight flour, but as a protein additive, it's really great!
