Lavender Bread (peasant loaf)
Hi yāall! I figured given the current state of everything, now would be the a good time to share a recipe focused around bringing calm and peace. I hope yāall enjoy this recipe as much as I do!Ā
Salt: protection, purification
2 ¼ teaspoons active dry yeast (or a .25 oz. packet)Ā
1 tablespoon white sugarĀ
4 tablespoons olive oil, dividedĀ
2 1/ 2 cups all-purpose flourĀ
3 tablespoons culinary lavender*
*It is important to make sure you use culinary lavender (lavender meant for human consumption) as non-culinary lavender may contain pesticides or other chemicals*
In a bowl, mix the sugar and water (the water should be warm, but not hot). Then stir in the yeast and let stand for 5-10 minutes, or until yeast is foamy.Ā
Next, grind lavender into fine pieces using a mortar and pestle. Then, add 2 tablespoons olive oil, 1 ½ cups flour, lavender and salt into the water and yeast. Mix until combined.Ā
Ā Add in 1 cup more flour and mix, adding additional flour as needed until the dough no longer sticks to the bowl. Afterwards, cover the bowl and allow it to rest in a warm place until the dough has more than doubled (this generally takes about 1-1 ½ hours).Ā
After the dough has doubled, grease a rimmed baking sheet with 1 tablespoon olive oil. Lightly dust a clean work surface with flour.Ā
Then divide the dough into 2 equal pieces and shape them into an oval on the baking sheet.Ā
Ā Now, let the loaves rest, uncovered, for ~1 hour, or until doubled in size. During last 10 minutes of rising, preheat oven to 400 degrees.Ā Ā
Next, bake loaves in the preheated oven for 10 minutes. Then, remove and brush the remaining olive oil on the loaves. Finally, bake for another 10 minutes or until lightly golden. Thatās it, enjoy!Ā
