I decided to share a little bit of some of the things I like to make. Today I made Frikadēļu Zupa (Meatball Soup). It’s fairly simple and easy to make. And of course, it’s delicious. 

Frikadēļu Zupa (Meatball Soup)

Indredients

1lb of ground pork

2-3 carrots (cleaned and chopped)

2-3 potatoes (2 if they are large, peeled and chopped into even bits)

2 eggs

onion (chopped, however much you want)

Vegeta and/or salt

sour cream

2 bay leaves

2 black peppercorns

water

Directions

Pour some water into a pot and add the bay leaves, black peppercorns, and some salt. You’ll have to guesstimate how much water you’re going to use. Bring to a boil.

While waiting for the water to boil, you can get cracking with the meatballs. Put the ground pork, 2 eggs, chopped onion, Vegeta or salt (to taste), and a tablespoon of sour cream into a bowl. Mix it all up. It’s best to just use your hands because you want it well mixed. 

Start making meatballs. You’re going to want them to be about the size of a soup spoon or smaller. 

Going back to the pot of water (that’s hopefully boiling), add the carrots. Let them cook a few minutes.

Next add the potatoes to the pot. Stir. 

You can add your meatballs right after you’ve added the potatoes. 

Now just let it boil. Don’t stir until the meatballs are just about cooked or already cooked, otherwise they’ll fall apart. 

The soup will be ready when the potatoes are soft and the meatballs float.
