Lemon Poppy Seed Loaf Cake

Slightly adapted from Averie Cooks

Lemon Loaf Cake

3 eggs

1 cup granulated sugar

1 cup plain greek yogurt

1/2 cup vegetable oil

1 tsp vanilla extract

Zest 4 lemons

1 1/2 cups all purpose flour

2 tsp baking powder

1/2 tsp salt

1 tbsp poppy seeds

Lemon Syrup

3 tbsp lemon juice

3 tbsp granulated sugar

Lemon Glaze

1 cup powdered sugar

3 tbsp lemon juice

Step 1

Preheat oven to 350F. Spray a 9×5-inch loaf pan with cooking spray and line with parchment paper; set aside.

Step 2

In a large bowl, whisk the eggs, sugar, greek yogurt, vanilla, and lemon zest until smooth and combined.

Step 3

Add the flour, baking powder, salt, and poppyseeds and stir until just combined. Do not overmix.

Step 4

Scrape the batter into the prepared loaf pan and smooth with a spatula. Bake for 45-55 minutes until a toothpick stuck into the middle of the loaf comes out clean.

Step 5

While the loaf is baking, make the lemon syrup. In a small saucepan, combine the lemon juice and granulated sugar over medium heat until the sugar is just dissolved.

Step 6

Once the cake is baked, poke the cake all over with a toothpick or skewer. Drizzle the lemon syrup over the loaf so that it soaks all over. Cool completely before glazing.

Step 7

Once the loaf cake is completely cooled, remove from the pan. Combine the powdered sugar and lemon juice in a small bowl and whisk until smooth. Drizzle the glaze all over the cake and serve.
