Chicken lettuce wraps

A healthy spicy dinner ready in less than 20 minutes!  Paleo & Gluten Free

Had the most amazing avocado toast at brunch this morning 😍👌

Amazing lunch after my workout!! A red bell pepper stuffed with a mixture of cilantro lime quinoa, pinto beans, sautéed onion, and salsa with a salad of arugula, roasted zucchini, brussel sprouts, tomato, feta cheese, sunflower seeds, and dressed with an 18 year aged balsamic vinegar 👌 I baked the pepper and veggies together in the oven at 400 degrees for 15 minutes.

Pickled onions & carrots! So good on sandwiches with hummus and other veggies👌 super easy to make too, just julienne the carrots, cut the red onion into thin slices, and add them to separate mason jars. Then in a medium sized pan bring a mixture of 1 cup apple cider vinegar, 1 cup water, 2 Tbsp maple syrup, dash of red pepper flakes, and 1 tsp salt to a gentle boil. Pour the mixture into each mason jar and press down with a spoon. I let mine sit for at least 30 minutes until I used them 👍
