This Spicy Spinach Quinoa recipe uses Indian spices to make quinoa and fresh spinach taste great and be healthy. With a touch of traditional Indian style, this dish is tasty and good for you.
Ingredients: 1 cup quinoa. 2 cups water. 2 tablespoons olive oil. 1 onion, finely chopped. 3 cloves garlic, minced. 1 teaspoon cumin seeds. 1 teaspoon ground coriander. 1 teaspoon ground turmeric. 1 teaspoon garam masala. 1/2 teaspoon red chili powder. 1/2 teaspoon salt. 4 cups fresh spinach, chopped. 1/4 cup chopped cilantro. 1 lemon, juiced.
Instructions: Rinse the quinoa under cold water. In a saucepan, bring 2 cups of water to a boil and add the quinoa. Reduce heat, cover, and simmer for 15 minutes or until all the water is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork. In a large skillet, heat olive oil over medium heat. Add cumin seeds and let them sizzle for about 30 seconds. Add chopped onions and saut until they turn translucent, about 5 minutes. Add minced garlic and cook for another minute. Stir in ground coriander, turmeric, garam masala, red chili powder, and salt. Cook for 2 minutes, stirring constantly. Add chopped spinach and cook until wilted, about 3-4 minutes. Mix in cooked quinoa and chopped cilantro. Cook for an additional 2 minutes until heated through. Remove from heat and squeeze lemon juice over the quinoa mixture. Stir well to combine. Serve hot and enjoy!
