I was at the ER at 2 am last night and I was told that #COVID19 cases are starting to pick up at all area hospitals. If you're hyperventilating and have high blood pressure without a fever or a cough and without known exposure, you probably already know that you won't get tested. In my case, it was due to anxiety. I almost blacked out yesterday after feeling dizzy because of hyperventilating so the advice nurse (after being on hold for 4 hours!) advised me to head to the ER immediately. My EKG and chest examination was normal (TG). Please know that you are not alone as I discovered after posting about my condition in my IG story. I probably have to layoff the caffeine (I drank a lot of coffee yesterday) ... and the alcohol from now on to not exacerbate it. Be safe... eat healthy, exercise indoors (I so need sun right now and might take a walk in the neighborhood), meditate, hydrate with plenty of water, practice excellent hygiene (my hands are so irritated with all my handwashing), meticulously disinfect daily, don't hug or kiss anyone... don't read the news or watch the Trump conference every day (that's what they told me to do), and hibernate indoors probably for the next 2 months or so. I feel that everytime I go outside, I am taking a huge risk of contracting the disease 😔). . . . . . . Coconut ginger curry... Organic Chilean mussels with quail eggs, roasted Molinari salame, spices, and a hint of absinthe. Cooking is my therapy. Confession: I worked for a short time as a cook at Sushi Enya and chef de partie at Angler last year. It was an invaluable experience to learn from the pros. While I was at a Wolvesmouth dinner, I heard chef Craig Thornton advise someone not to go to culinary school and to spend time working in a professional kitchen. It has been something that I've always wanted to do... to see what goes on behind the scenes being obsessed with food. The stories I could tell you! There's so much more to learn and experiment in the kitchen. Next project is baking more bread and making a starter from scratch. Thinking of my former colleagues in the restaurant industry at this difficult time. It has definitely affected us at the bakery. Easy banana bread recipe (2 loaves): 2 eggs 2 cups sugar 1/2 cup milk (or almond/oat/banana milk) 2 tsp. lemon (or lime juice) 1/2 tsp. vanilla extract (or imitation vanilla extract 😳 if that's what you already have or can find) 1 stick of butter (allow it to temper or place in the microwave to soften - 20 seconds-ish?) 2 tsp. baking soda 3 cups all-purpose flour 4 whole bananas peeled and sliced Optional: Light sprinkle of raw sugar to top of mix before baking, top with your favorite nuts or nuts you have in your pantry (I like using walnuts or hazelnuts so far). Preheat oven to 325°F. Whisk your eggs and sugar. Mix wet ingredients together -- milk, citrus juice, vanilla extract, then add softened butter, bananas and flour. Continue to mix ingredients with a spatula. Coat 2 loaf pans with softened butter. Split mix between 2 loaf pans. Should be filled to about half of a pan as it will rise. Optional: Add raw sugar or chopped nuts on top of mix before placing in the oven. Bake banana bread for about an hour at 325°F. Around 45 minutes into baking start to check banana bread with a cake tester or toothpick and continue to bake until it comes out clean. Use this recipe and improvise by using ingredients you already have. OK to substitute bananas for plums for example. It's delish 😋 as well.
