Yamada Yu’s Steamed Burger Patty Recipe
½ finely chopped onion, pan-fried with butter
1 teaspoon of nutmeg (optional, since I don’t have nutmeg I used cinnamon instead)
½ cup of breadcrumbs (you can also use soda crackers—put the crackers in a clean plastic bag and crush it with a glass bottle)
Some green onions or scallion (optional)
1 tablespoon of soy sauce
1 tablespoon of mirin (Japanese cooking wine) or any white wine
½ tablespoon of oyster sauce
1. Put the cooked onions in a big bowl and add everything of A in the bowl.
2. Mix everything well with your hands. You can put on disposable plastic gloves if you want.
3. Take ¼ of the mixture and squeeze to form a ball. The total mixture can be made about 4 balls.
4. Put one meat ball in a frying pan, press it a little bit with your spatula and slightly brown both sides.
5. Add some water in the pan. The water should be about the 1/3 the height of the patty. Put the lid on and steam it with medium fire until half of the water is gone.
6. Add everything of B and put the lid on again until the mushrooms are cooked. The water should be reduced to a thick sauce.
7. Put the patty, mushrooms, and green onions in a plate and drizzle the sauce on it.
