How long does your food last?
First, you want to make sure that you are storing your food properly...otherwise, it wonât last very long. Generally, following the expiration dates on your product is a good move. Perishable foods should never sit out of refrigeration for more than two hours. If thereâs no expiration date on the package, then the attached infographic chart may be a good guideline. Freezing is generally a smart storage option if you wish to extend the shelf life of perishable foods for even longer. But youâre absolutely right about doing the smell/vision test: when in doubt, throw it out!

Taiwanese Popcorn Chicken (Baked)
Ok. Hereâs one of my all-time favorite dishes! The classic version you might find at a Night Market stall is usually deep-fried, but hereâs a healthier version (baked) that tastes just as amazing. In my 20+ years of life, I have never turned down eating Popcorn Chicken (sometimes also called Salt and Pepper Chicken). Itâs so easy, and I promise itâs so good...why donât you go ahead and give it a try? :)Â Â Â Â Â

Ingredients:
4 cloves of garlic, crushed or grated
1 tbsp soy sauce
1 tbsp sesame oil
1 tbsp oyster sauce
2 tsp five spice powder
1 tsp sugar
1 tsp white pepper
2 tbsp cornstarch or potato starch for marinade
1/2 lb boneless chicken thighs (cubed into desired size)
4 tbsp cornstarch or potato starch for coating
Optional:Â
Recommended spices: salt, sugar, five spice, chili powder, pepper (to taste)
Garnish: Thai basil
Directions:
In a bowl, mix together the first 8 ingredients listed (before the chicken).Â
Toss chicken cubes into marinade for at least 30 mins. Make sure every piece of chicken is coated. Meanwhile, preheat the oven to 450Ë F.Â
Put about 2 tbsp cornstarch or potato starch into a clean bowl and mix with some salt, sugar, five spice, chili powder, and pepper (these toppings are optional and amounts are arbitrary-just use enough to taste). Fully coat the marinated chicken in this mix. Then, add 2 more tbsp cornstarch or potato starch and fully coat the chicken. The chicken should have a thin and light coating but be dry to the touch at this point, if not, add a little more. Donât over-do it otherwise youâll taste the powder. â
Place the chicken on a wire baking rack on a lined baking sheet and bake for 20-25 mins. Add some Thai basil leaves for baking as well. Donât put the chicken directly on foil as itâll stick. The wire rack allows the chicken fat to drip down.
Serve hot (or cold is really good too) and enjoy! If seasoning is not enough, feel free to add more salt, sugar, five spice, chili powder, pepper, etc.

Sweet Potato Lasagna
Lasagna is a crowd favorite, no questions there. But have you ever wondered how you could âswitch things upâ or âadd a little twistâ to create some new lasagna excitement? Hereâs a hint: swap out the pasta for some sweet potato, and youâll be in it for an entirely new experience! And bonus: it tastes great, but itâs also healthier and gluten-free!  Â

Servings: 4-6
Ingredients:Â
(Filling)
1 (15-oz) container ricotta cheese
½ cup crumbled feta cheese
2 garlic cloves, minced
Âź cup chopped fresh basil
2 tablespoons chopped fresh sage, more for topping
Salt and black pepper
(Lasagna)
Extra-virgin olive oil for drizzling
½ cup marinara sauceÂ
2 sweet potatoes, cut into slices (enough for 3 layers)*
2 cups spinach
½ to ž cup shredded mozzarella cheese
2 tablespoons freshly grated parmesan cheese
Âź cup chopped parsley, optional
Directions:
Preheat the oven to 375°F.
In a medium bowl, mix together the filling ingredients.
Lightly grease an 8x8 or similar size baking pan with olive oil. Spread the marinara sauce over the bottom of the baking dish and top with the first layer of sweet potato slices. Spread with half of the ricotta cheese mixture and add a layer of 1 cup spinach. Add the next sweet potato layer, the remaining ricotta cheese, and the remaining spinach. Top with the last layer of sweet potatoes, the shredded mozzarella, and the parmesan cheese.
Bake for 35-45 minutes, uncovered. If cheese starts browning too much, cover the pan with a sheet of aluminum foil. Add the remaining sage during the last minute of baking time.
Remove from the oven and let sit for 15 minutes before slicing. Sprinkle with parsley, if using.
Note:Â If your sweet potatoes are not thin, you will need to increase the baking time in order for them to become tender (and cover for half of the total baking time).

Everything that we eat contributes to our blood glucose. We likely take it for granted that our body works hard to regulate our blood glucose levels and utilize the glucose for cellular needs. One group of diseases, called diabetes, occurs when the body is unable to control/uptake blood glucose, resulting in high blood glucose levels. Â

What is a truffle? If the first thing that comes to mind is that dark, pungent, high-end cuisine delicacy, you are absolutely right. But todayâs topic isnât about the kind of truffle youâd be served in a 3-star Michelin fine dining restaurant. Instead, todayâs truffle-of-the-hour nudges your tongue with its bursts of honey-like sweetness. It has its own place in the culinary world too, and its name is Mattirolomyces terfezioides. Â

Iâll bet youâve heard of the word anemia, a condition of the body where your blood is deficient of red blood cells or hemoglobin (red blood cell component). But did you know that there are many different types of anemia? Each type of anemia has a different cause. The star for today is folate deficiency anemia, an anemia characterized by megaloblastic (immature), macrocytic (large) red blood cells. Â
