ingredients:

any kind of cooking oil

1 package of spicy italian sausage (the loose ground kind, not the links!) (you can use mild if you don't like the spicy kind)

4 cloves minced garlic

3 red bell peppers, sliced into strips (you can sub one or two for green bell peppers if you like, it makes the flavor different but interesting. yellow and orange bell pepps are too sweet for this recipe!)

1/2 onion, finely chopped

1 zucchini, cut into circles and then you cut the circles in quarters (can't think of an easier way to describe that shape)

2 cans fire roasted tomatoes (or roast and slice your own tomatoes if you have the time!)

1 can white beans

2 containers of chicken or vegetable stock

about 2 handfuls fresh or frozen uncooked green beans, cut in half- please don't use canned though, they'll get all mushy!

1/2 cup basil

1/2 cup parsley

salt

pepper

OPTIONAL: little shell pastas :)

BIG SOUP POT. do not attempt if you have only a small soup pot.

instructions:

heat your oil in the soup pot on medium heat, then add the sausage. break it up into whatever size chunks you want, then brown it.

add the garlic, bell peppers, and onion. cook it until the bell peppers are softened.

add the beans, tomatoes, stock, and green beans. take it to a simmer, and let it simmer for 10-ish minutes.

if you want to add little shell pastas, it's time now! add as much as you want, then cook them in the simmering broth according to the time on the package.

add your basil and parsley

salt and pepper to taste! you can also add cracked red pepper if you want it to be spicier.
