Buffalo sauce, <half cup Chives, 2 tbs Onions, 1 tbs Cream cheese, 1 ts Bacon, 2 strips Sharp Cheddar, 1 slice Gouda, 1 slice I was out of blue cheese so I had to get creative. I used the deli style cheeses, they weigh about 20 grams a slice. I used whipped cream cheese for texture. Plus cream cheese is awesome. There are substitutes for texture I considered like ranch, powdered buffalo potato chips, gravy or evaporated milk. Melt the cheddar, gouda and cream cheese, add the chives and onions, stir. Microwave the buffalo sauce separately because when heated, the vinegar becomes very pronounced and overwhelming. All other ingredients will suck up the vinegar flavor. Mix everything together, add bacon on top. The mozzarella sticks went good with it too.
