There's other bosses in the series that are at least decently harder. It might be unfair to bring up Consort Radahn, since that came later, but that's one I haven't beat yet and have done multiple playthroughs of all of the other souls games and Bloodborne since first facing him.

Speaking of Bloodborne, the only other boss I haven't beat is Laurence. I spent countless hours fighting him. There was like a whole month where all I did when I came home from work was fight him over and over again, until I actually had a nightmare where a mini version of him appeared in my apartment and I had to fight him irl. The next day I called it quits and fought Orphan of Kos instead, who at the time had the crown for hardest souls boss, and beat him in like 5 tries.

As far as bosses that are harder than Malenia goes I nominate Ludwig (very similar to Malenia in the way that he was really difficult the first time and had to really study his moves to get it down and it's somewhat easy now, but back then I felt like I hit a wall and he still finds ways to fuck me), Midir (I really love a good dragon fight and it went pretty good the first time but subsequent playthroughs I've found myself struggling), Orphan of Kos (same story as Midir), and Throne Watcher and Defender (that one's on me, I think I got complacent because Dark Souls 2 bosses are so easy that I beat most of the others first try on my first playthrough so there's that).

Honorable mention to Manus, for Dark Souls 1 standards he was way tough, and being late for the party I figure a lot of people were talking about it back then. In any other souls game he would be baby easy, but with how slow you are in that one he has the ability to ruin your whole day. I think I've only beaten him once without the Sif summon.

But yeah, Malenia aint that hard. And it's a really fun fight. I don't wanna hear shit about the waterfowl dance, there's a way to dodge it and I dodge it perfectly almost every time and the only time I don't is because I'm out of stamina and am too close to it, and even then I usually manage to get away with most of my health, git gud dork. I don't think I've convinced anyone to play souls games, but hey if you're trying Elden Ring don't be afraid of it.
