The first is that Mizumono comes from a japanese expression-"gain or loss is a matter of chance". Which is exactly what happened. Will running away with Hannibal was a gain. Will betraying him was a loss. From the moment Hannibal smelled Freddie Lounds he knew gain or loss was a matter of chance. And Hannibal doesn't risk. Hannibal does not count on chance. He plays God, he controls everything. However...for Will Graham he counted on chance.

The opposite is also true. Gain and loss were also Will's endings as well. He would run away with Hannibal or he would die on the kitchen floor.

The second thing is that the other meaning of Mizumono is dessert. Just like Dolce. I like to think that Dolce is the alternate way Mizumono could have done. If they had run away they would have most likely been together in Florence by then.

Mizumono shows what happened when the chance was cruel enough to make them both face loss.
