I did an experiment with the Kale I bought yesterday:
The kale bunch on the left was not rinsed, and was then stored in the fridge. It was wilted and soft to the touch this morning when I took it out.
The kale bunch on the right WAS rinsed, and then also put in the fridge yesterday . By this morning it had yellowed a little, but was still crunchy and tasty and felt alive.
**Kale in your garden will react similarly. If it is under watered it become softer or wilts, if it is overwatered it becomes too yellow.
Conclusion: if you rinse cut kale leaves with water they can still get some nutrients from it and extend their vibrancy/life a little longer. so rinse and store for extended freshness.
Todays Plant: Mother of Thousands (Bryophyllum Daigremontianum) Fun fact: Her seedlings grow along the edges of her leaves. Their root systems begin to develop before they drop to the ground to propagate. ♡ ♡ ♡ ♡ ♡

Today is Valentines Day. So, I decided to create two snacks featuring my two biggest food loves in the whole wide world: KALE and AVOCADO!! I found an article about kale on the L&B blog this morning and it included a tasty kale salad recipe! Click the link to see it! Warning: If you want to recreate this recipe yourself, just know I had to sneak over to the co-op to find nutritional yeast and sesame seeds because the Lunds and Byerly's down town didn't have them, despite the recipe calling for it. I didn't mind though, it's important we are supportive, patient, and understanding of the greedless, good intentioned, and well researched changes that food based companies are making for their consumers today. Another cool feature on the L&B website is a spot where they have a Food, Nutrition, and Wine Guide. It's an interactive food and wine list (i.e.: If you click on berries, it pulls up a nutrient chart, etc.).

YOGA BREAK I'm a total yoga newbie. As I wrap up with leftovers, and prepare for a new diet trial I've been digging around the L&B site. There will soon be a section of the Nourish eating lifestyle called "Create Harmony" about how to take time and slow down in life. How cool is that?  Yoga is a great way to find balance with your body. I like to do yoga/stretch in front of my plants. If you look closely you can see my sage plant at the bottom right of this pic. I like to think it promotes growth. I'm currently trying to figure out dancers pose. Any tips? Â

Next week I'm going to explore Lund's and Byerlys. Here's why: I had the privilege of chatting with one of their dieticians and she showed me some really great things they've started doing this year! -If you look closely when shopping at L&B you'll notice small cards placed next to items in the produce section (i.e.: garlic), these cards tell you about the ingredients benefits as well as some nutrition facts! -They have a food blog and it's amazing. -They have something called Nourish Thursdays, and each month has a different theme. You can stop in the store, and there will be a small table set up where you can go learn something about that months theme. So cool!
