We had it so easy.

I cooked short ribs Sous-vide for 72 hours and they were pretty darn good - it’s worth the wait (and it’s not like you’ve got to do much maintenance). I used the base braised tamarind short rib recipe from Oleana: I used the juices from the bag and some white wine, shallot and butter to make a pan sauce. That’s baba ganoush and Swiss chard with it. #cooking #food #sousvide #beef

So Daniel and I got a blowtorch for our cooking. We do a lot of sous vide stuff and it’s a great way to finish it. (The Bernzomatic 4000 we’re using costs $35 at Home Depot, you don’t need some doofy $100 artisanal model from Williams-Sonoma). #cooking #food #culinary
