Here's a fun, easy, healthy, and sure fire yummy way to enjoy your rice. This recipe uses brown rice which is rich in fiber and antioxidants. Also you get some more antioxidants from the spices you will be using.It's kid-friendly spicy too. So, go! Put on your sombrero and start cooking. Ole!
1 tablespoon Extra Virgin Olive Oil
1/2 teaspoon Chili Powder
1/2 white Onion, finely chopped
1 cup Brown Rice, rinsed and drained
1 tablespoon Tomato Paste
2-3 Sweet Red Pepper, finely chopped
1. Heat oil in a pot. Add cumin, chili powder, and paprika.
2. Add onion and saute for a minute.
3. Add brown rice and stir until it is covered with the spice mixture.
4. Add tomato paste and salt. Pour in water.
5. Bring to a boil. Then lower the heat to simmer. Cover and cook until the water is absorbed about 30-40 minutes.
6. Turn off the heat. Add the sweet pepper and stir.
Serve and enjoy! You may garnish it with some green onion leaves or cilantro. Squeeze some lime or calamansi over it. This dish is easy to pair with veggies and dry-cooked or braised lean meats.
This recipe makes about 3 cups of cooked rice. You can portion them in microwavable containers and keep it in the freezer for later. They keep well and easy to reheat especially when you're in a hurry.
I portioned mine by half a cup which is one serving of complex carbs. :)
