This could be what it says, though. Web browsers are very malleable. I'll offer a few suggestions:
1. Create a Custom User Script
I'm no good at JavaScript, but presumably this should be pretty easy. You only need to change the message attribute of moz-promo#isDefaultPane, the shadow DOM should update accordingly. Something like this:

I leave it up to you to figure out how to get that to run on an about page. If you want to tweak the styling, the relevant shadow child is gonna be div.container > div.text-container > p.message.
2. Bodge It with a User Style Sheet
Go to about:config and set toolkit.legacyUserProfileCustomizations.stylesheets to true.
Next, go to your profile folder by navigating to about:profiles and clicking the "Open Directory" button next to Root Directory (not Local Directory).
Create a new folder in your profile directory called "chrome" and then create an empty file in that directory called userContent.css
Paste the following (or something like it, if you're better at CSS than I am) into userContent.css. Save that file and restart Firefox. (You can restart Firefox from about about:profiles by pressing the "Restart normally..." button.)

3. Leverage the Power of Open-Source
Follow Mozilla's documentation for bootstrapping the Firefox source tree, then edit the "is-default-browser-2" key of firefox/browser/locales/YOUR-LOCALE/browser/preferences/preferences.ftl. For en-US, this will be on line 938, so e.g. sed -iE '938s/Good choice\./Good person./' firefox/browser/locales/en-US/browser/preferences/preferences.ftl. Now start the build. If you chose an artifact target, this won't take very long.
