the older I get the more I realize that the secret to cooking is not giving a shit. left the stove unattended, but spent the whole time you were away worrying about the food burning? food senses your fear and it burns out of spite. spent that time not giving a shit? it will be fine when you get back to the kitchen.

but honestly, if you mess up and you don’t really care all that much, next time you won’t make the same mistake. but if you mess up and get really upset about it, next time you’ll be so anxious that you might forget not to make the same thing again or you might make a newer, and even worst mistake in your kitchen. and this is coming from a person that has made a few blunders in her lifetime when cooking
