Like with a lot of French pastries, if the bakers aren’t specifically French trained it’s noticeable. I don’t typically see this one executed well, if at all, in less populated areas (of the usa.*) This is a treat born out of utility. Simple ingredients turn a stale croissant into a new item. Convenient and delicious. Regularly more affordable, and justifiable, than other cafe options.
This screams practical mtl city youth with an appreciation for simple joys and a strong opinion on the difference between good and great.

Both of these tend to be popular with older folks. I would guess this is influenced by close relationships with grandparents or community elders. Possibly a family that places importance on traditions through food!
