Banana Oatmeal & Jam Muffins

check out these cuties! you can frost & top them with whatever you’d like, these guys have fluffy peanut-butter / cocoa-powder frosting. but, here’s the recipe for the brownie base! the most important part; 1 ¼ cups of soft pitted dates, ½ cup walnuts, ½ cup of macadamia nuts, ½ cup of rolled oats, ½ cup of dark chocolate pieces or chips, 2 tablespoons of cocoa powder, 2 tablespoons of earth-balance or coconut oil, 2 tablespoons of cacao nibs ( totally optional ) all you have to do is pulse everything in a food processor, then press the brownie mix down into a baking dish lined with parchment paper, then pop in the fridge for about 30 minutes. eat as is or spread with whatever you’d like! easy-peasy & definitely your new favourite brownie recipe. 😉

No, but it is an epic lunch 😉 Puff Pastry Pinwheel Pizza 🍕 (I didn’t know what else to call it) 2x puff pastry sheets cut into a circle Tomato paste, garlic and herbs spread on one Vegan mozzarella sprinkled on top Second sheet added, then cuts formed outwards from centre and twisted, brushed with plant milk Baked at 180C for about 20 mins and you’ve got yourself an epic meal/snack/whatever 👅

I needed some balance after having a green juice with lunch 😏 @jamieoliver vegan brownie recipe topped with pink fruit jelly infused icing. The two flavours didn’t mingle like I thought they would, but I needed to use the icing up and having sweet treats handy always picks up ones mood ☺️

Today’s Toastie inspiration is tomato, vegan Mayo, vegan cheese and avjar (capsicum and eggplant dip) on sourdough 🍞🍅🍆🧀🍔 Wowie, it’s almost the weekend and this weekend I fly out to South Korea and Japanese for a three week getaway!
