Chrispy- ANARSE/ANARSA
Anarse is Chrispy, crunchy, round and an authentic Maharashtrian traditional delicacy .It is usually prepared in festive season, specifically âDiwaliâ.In Diwali we make Diwali Faral.This anarse are part of that platter. In Maharshtrian home diwali is incomplete without anarse. Anarsa is offered as naivedhyam( prashad) to goddess Lakshmi on Lakshmi Pujan day.
Anarse is made of rice flour, jaggery/sugar, poppy seeds/ sesame seeds. Making anarse is bit tricky even though the recipe is very simple. It needs to soaking rice for 3 days with change of water daily to mitigate fermentation. Then dry the rice little, retaining a minimal amount of moisture and ground into a fine powder also know as pithi which is mixed in equal portion of jaggery/sugar.Gulache anarse, means the anarsa made with jaggery. and is one of the most common sweets prepared in other state also.
