Also who would Bucky be as a Transformer?

Fighter Jet.... With the idea of a Falcon Autobot, I'd go with an Aerialbot, any of them. Like I love Jazz, I really do, hell I could try to figure a flight mode.

But if you want a fighter jet there's plenty: first up is Jetfire but he's too big, although he fits the Cap bill. There's mainly Silverbolt (the plane, not the bird dog), Air Raid, Slingshot, Fireflight and Skydive. I'd lean to Skydive or Air Raid but I have yet to get a clue on how to use them. And Jazz is too carefree compared to Falcon.

And for Bucky.... Originally I was thinking of Whirl from IDW, but he's more Wade Wilson. There is always Armada Wheeljack but I wanna rework him to be a turncoat Sideswipe, plus he's more Archangel from X-men on Armada specifically.

Or I'd let the current X-Men writer make that decision based on what the story they have in mind would require and who it would focus on. Hell you could even say that it would be in the hands of Sinister since he always has something happening in the background.

It depends on what you would find in either romance: With Jean, Scott would probably still be in the early years, developing and falling in love for the first time when trying to lead before shit hits the fan (well, it still does but it doesn't break him into a new man yet), learning and growing slowly as a person, and finding some comfort while being a responsible leader.

But there's also the constant dangers, melodrama, the inevitable tragedies that come. With the X-Men it's always an "us against the world" deal, especially in romance, and eventually things might not work out from the cataclysmic events like say the Phoenix Force and by consequence Madelyne prior, who is both a testament to their love, and an omen of their doom.

With Emma, the whole "us against the world" stance is still there, but by then Scott is a different person, he has reformed himself after breaking many times from the past and the distance that separated both of the lovers. And even despite the turbulence, at least Scott finds enough solace to not just be the leader but still carry a bigger weight and burden from his position, I'd say it's a lot healthier with their co-leading and confining with each other.

Plus it helps that both are mature enough to have a more objective view of the world and uphold their standing without an external compromise (well, it's still compromised but it's not that- alright it is influenced)

By the latter stage? I'd say it was better for Scott to be with Emma, but apparently he got back together with Jean in Krakoa so who knows.

This a bit of a hard question to answer based on the cons of each character and their pros.

And with Jean and Emma... It's a tough choice.

I like their characters even with the few media I've learned about them, although maybe I should start reading more of the comics instead.

That said, I wouldn't be sure who to pick, like you've got me on as the cow deciding the illusion of free will.
