Indulge in the creamy richness of caramelized white chocolate ice cream, a decadent treat with a hint of caramelized sweetness.
Ingredients: 300g caramelized white chocolate. 400ml heavy cream. 200ml whole milk. 4 egg yolks. 100g sugar. 1 tsp vanilla extract. Pinch of salt.
Instructions: Cut the white chocolate that has been caramelized into little chunks. Put the whole milk and heavy cream in a saucepan and heat them over medium-low heat until they just begin to stew. Whisk the egg yolks, sugar, vanilla extract, and salt together in a different bowl until everything is well mixed. Slowly pour the hot cream mixture into the egg yolk mixture while whisking all the time to keep the eggs from curdling. Put the mixture back in the saucepan. Cook it over low heat while stirring it all the time until it gets a little thicker and coats the back of a spoon. Take the pan off the heat and add the chopped caramelized white chocolate. Mix the chocolate until it melts and is smooth. Through a fine-mesh sieve into a clean bowl to get rid of any lumps. Cover and put in the fridge until it's completely cold, preferably overnight. After the mixture has been chilled, use an ice cream maker according to the directions that came with it. Get the ice cream out of the machine and put it in a container. Freeze it for a few hours or until it is firm. Serve and have fun!
