For breakfast today: Banana soufflé: 1 tablespoon butter melted Two ripe bananas mashed 1 tablespoon lemon or lime juice 5 tablespoons sugar 3 eggs separated Salt Pre-heat oven to 400 degrees Butter 4 ramekins and put two tablespoons of sugar in one and rotate to coat ramekin with sugar and dump excess into next ramekin until all ramekins are coated. In large mixing bowl, combine mashed bananas, rest of sugar, lemon juice & egg yolks and beat with electric beater until smooth. Be sure to clean beaters before next step. In another mixing bowl, beat egg whites and a pinch of salt until it forms soft peaks. Fold egg whites gently into banana mixture until mixed. Pour batter into coated ramekins and place ramekins on a baking sheet and bake 15 to 20 minutes!!
