Yes, you read that correctly!

I saw a few pin's on this amazing skill and I thought I would give it a try!

I hope you love it as much as I do!

*Collaboration*

I have been lucky enough to find a couple great bloggers to do some work with!

On this first collaboration project we decided on doing healthy spring snacks.

I decided to do this super yummy, crazy beautiful apple flower pot. & Please don't run away screaming, it's not hard to make! Really.

  After washing your apple of choice, use a paring knife to cut small wedges out around the top. I spaced mine randomly, I didn't measure. After cutting out all of the wedges, use a larger kitchen knife to cut off the top of the apple, be sure to cut below the wedges. After the top is cut off use the paring knife again to cut around the wedges to create petals. Don't pull off the stem, it creates a cute little stamen for your flower. Using a tooth pick create a stem. Then using a melon baller (or a measuring spoon) scoop out the seeds and core of the apple. Fill with your favorite fruits and add your flower.

(Try it! It's easy)

 (If you want to make these a few hours ahead of a gathering, mix together a few teaspoons of water and lemon juice, brush over the flesh of the apple. Refrigerate until event).

I for one am not a big fan of these and I always wondered why they even sold them, then went crazy after they started making them for ALL Holidays! But then I married someone who loves them and of course my little fella loves them as well. But after some thought I decided I wanted to give them a little bit of chocolate (they were much better)!

  Bunny Peep-Pops

(Just In Time For Easter)

   Using some melted down milk chocolate coating on the end of a sucker stick I put each peep on his own stick. After they cooled I dipped them one by one into the melted chocolate to cover the entire peep, then I sprinkled some shredded coconut on each one. I even placed a little cotton tail on a few.  

  I did use cotton candy, and of course it didn't hold up for very long. If you have other cotton tail ideas, let me know!

I am so excited about this post (and the upcoming ones)! My weekend was filled with Easter crafting and making. It's definitely beginning to be that time of year where all my ideas go crazy in my head and I end up making/creating more than any person needs! So get ready for them all!  

 *A Dozen Days of Easter*

 The first fun craft is this adorable Easter Countdown. I know most of us with kiddos do a countdown to Christmas, and I thought both of these Holiday's are extremely important so why not do a countdown for Easter as well!  

*Materials*

This craft, although extremely fun, takes a bit of forethought. You'll need 12 plastic Easter Eggs, 1 paper egg carton, scrap/construction paper, hot glue, green paper grass, colored sharpies, decorations (stickers, glitter of whatever you have) and of course 12 treats, notes or toys.

 *Create*

Using your crafting supplies decorate the top, it does not have to look exactly like mine, but make it custom for the child (or adult) you are creating it for! After the outside is decorated, open up the carton and decorate the inside top. It just happened that my egg carton had the perfect Bible Verse for the occasion, so I made sure to showcase it well. Then using the glue, add grass to the outer edge of the egg separators. Make sure you let the glue cool or dry before putting in the eggs. Label each egg from 1 to 12, add the treats and place the eggs in the carton!  

 Then begin on Tuesday, April 8, 2014 by opening the first egg (or your kiddos will). You can either begin with the number twelve to count backwards or begin with one and count up the days.

I know that I have been getting posts up three times a week, on M, W, F but yesterday was a busy day for me. After work we spent the evening at my parents place, so I am sorry for not being consistent!! But any who!

 *A Greener House*

 We managed to put up our new greenhouse as a family on Thursday. It was such a fun time together, we even had our son in on it. Granted we did try to make it as educational as possible but it ended up being very fun!

 (We separated each part by letter name, then labeled the box so we could just ask our son for a letter part, great way to practice letter recognition)!

   (The frame before the shelves, we also used zip ties to ensure the shelves would stay in place)

 Now I am ready to get some seeds going, I think we are going to do several types of tomatoes (this is our best plant so far to grow), peppers, herbs, squash, and more I'm sure. I also have some garlic started in the house already. I am surprised on how fast it started, I thought it would be a slower process, considering how small they start out, in just a few short days we have green tops about two inches. If I can get them going well outside in the green house I'll do a DIY post on it and share with everyone. I also have that celery going, and if it amounts to anything I'll also do a post on it!

Spring officially begins on Thursday, and I have already began decorating.

Easter is without a doubt one of my favorite Holidays, okay so yes they are all my favorites, but this one is exceptionally special for each and every person on Earth. We are blessed! 

                       *Eggs, Eggs, Everywhere*

I have placed two baskets of plastic eggs on the stairs, somehow they have managed to avoid being knocked over (so far), while I try to remember to bum fishing line off of my dad and brother so I can use it to hang the eggs on the tree in our front yard. I hope to have it finished before the week is over!

Do any of you still carry this tradition at your home?

 I also have a cute little basked filled with Easter fun sitting in the living room. It's actually the basket I use for my son's Easter Basket. Guess I'll have to empty it before Easter Sunday!

  *Easter Tree Craft*

I picked this idea up from Pinterest, I'm not sure if I used the exact items from that pin but I winged it and I think it's super cute. I also used a hot glue gun and it worked really well. I thought it might melt the Styrofoam but it didn't! The glitter eggs came from the dollar general, the Easter grass may have also came from there (but I can't remember), and the cone came from Hobby Lobby (yes I used a 40% off coupon).  To make it at home make sure you glue the eggs on first, then the grass.

I'm not sure if the weather has been as annoying everywhere else, like it has been here in good ol' Kentucky. But I am praying that the snow is over and warmth is on it's way for a while. I hope each of you are staying warm and safe during this unpredictable season.

 *Blowing Out The Candles*

The middle of March is an exciting time for our family because it begins the season of birthdays. It begins today, occurs about two to three times each month until the end of August. Actually in a couple weeks my hubby will be turning 30, I'm not really sure that he is as happy about it as I am about planning it. I am not looking to do very much, just something small here at the cabin. 

  *Extra St. Patrick's Day Fun*  

We had our St. Patrick's Day dinner yesterday and I took a few shots of the yummy things I made. We can't really do traditional Irish foods, because of our low sodium and gluten free diet. We had a hearty warm soup, old fashion pistachio desert salad and Fizzy Lemon Lime Punch. It was a very tasty meal.

  To make the fizzy lemon lime soda punch you need 1/2 a container of frozen lemonade concentrate and lime as well, one two-liter of sprite, two cans of water and a lemon & a lime. Combine all wet ingredients. Slice up the lemon and lime for a garnish.

Super fizzy and delish.  

  This next recipe is one of those seventies throw back desserts, I know you remember it being on grandmas table. Pistachio dessert salad, aka Watergate salad. One box of instant pistachio pudding, one can of crushed pineapple un-drained, one cup of mini marshmallows and an 8oz tub of cool whip (thawed). Combine pudding mix and pineapple, allow to set in refrigerator for about 10 minutes. Then fold in cool whip and marshmallows. Best if eaten on first day made.

 We are always excited at our house when St. Patrick's Day rolls around because our little fella is allergic to red dye and we can buy Lucky Charms with NO RED DYE!

Okay, so maybe buying three of the family size boxes was a little much, but we found a great way to give them a new twist.

  *St. Patrick's Day*

Marshmallow Treats How sweet are these?!? : )  

  You can make your own at home (in the microwave) with four cups of marshmallows, three tablespoons of melted butter, 5 to 6 cups of Lucky Charms (St. Patrick's Day Edition used here), a microwave safe bowl, cooking spray and a 9x13 cake pan. Heat the marshmallows in the microwave, then fold in the butter. Gently fold in cereal and place in a sprayed cake pan to set! We have had a couple wonderful warmer days here in KY, but today has brought a cold spell. The temperature is dropping every hour and the wind & rain has really picked up. I just pray that there isn't snow accumulation tonight. I am sick of the fluffy white stuff, I need warmth and sunshine! (As I sat typing, small bits of hail started to hit the metal roof). Yup, I shouldn't have spoke about the weather! Oops!

  *We're Having Fun in the Kitchen*

 Of course with a cooler day it's best to stay inside, so I've picked a couple of my favorite creations from the past week to share! *Camo Cupcake* The first is this super cute camouflage cupcake, my little man and I decided that we will be making these for my brothers high school graduation since he is a hardcore hunter!

  ~Make em' at Home~

Regular white cake mix, gel food coloring in black, green and brown, printer (for the deer toppers), tooth picks and icing! Separate the prepared cake mix into three bowls, color each bowl a different color. Layer the colors in the cupcake papers and bake! Top with frosting and deer pic.  

  *Rice Noodles*

The second item I've made is rice noodles. I ended up using my sweet and sour sauce (recipe here) and just made a basic sweet and sour shrimp stir fry over rice noodles. It was the first time I had made rice noodles. The directions didn't work out for me so I placed the noodles in warm water and brought it to a boil, I let it boil for about three minutes then drained it immediately. They were perfect!  

*Gluten Free Peanut Butter Cookies*

I also whipped up a batch of gluten free peanut butter cookies. I did begin with a store bought mix but I added 1/4 cup of light brown sugar and two heaping table spoons of creamy peanut butter. I only baked them for 9 minutes (instead of the preferred 15). They were yummy and my husband was thrilled to have warm chewy cookies for the first time in years! You should try it out, Hodgson Mill Gluten Free Cookie Mix, Low Sodium and Wheat Free! It's a great mix if someone in your family is gluten intolerant or wheat allergic.

As winter is hopefully coming to a close for this season, the Maple tree tapping season is coming to a close. Unfortunately I have managed to delete my photos of the spiels and buckets hanging on the trees. I'm not sure if I'll be back at their place before he takes them down for cleaning, so we might have to wait for pictures until next winter. My dad has always been a farmer, gardener and bee keeper; he is one that prefers knowing where his food comes from, well this past year he also took on being a 'sugarmaker'. He has had so much fun trying it out and he is hooked; as well all are.  

 I never dreamed it would be such a lengthy (but fully rewarding) task. I was surprised to learn how much 'sugarwater' it actually takes to make just a little bit of pure maple syrup, then the straining and boiling. If it sounds like too much, please do not let that scare you, it is fully worth it. Just like gardening I would say, you put the work in and you are able enjoy the harvest. Same goes will all things in life, including good ol' pure maple syrup.

 Well after all of his hard work and dedication he has now produced several quarts! And it is delicious. He obviously has a bit to learn yet, but our family will sure enjoy his labors of his love! We haven't "graded" our Home Harvested Kentucky Maple Syrup yet (only by taste, it gets an A) but hopefully next season we'll get that kit!

After my dad had gotten interested in maple tree tapping, I skowered the web looking for the right products to get him started. We decided to order from Tap My Trees, and we were impressed. They even offered to assist in any way they could and even have great tips and tricks on their website.

...Turn This Stupid Fat Rat Yellow...

Okay so no I'm not making a post about Harry Potter, but I have been doing a lot of watching of it lately. Being stuck inside is a real bummer.

But I can see the sunshine, I am hoping for daisies and I might have been cooking with butter and marshmallows, so the quote reference works right? Eh, anyway...

Okay so those of you without a Harry Potter obsession I apologize profoundly. I guess you now know that I am a bit of a nerd! : )

 *Yummy Nummys*  

I have been busying myself with a new recipe and I have to share it with each of you. I'm sure all of you love (or have at least tried) caramel apples and snickers bars. I'm not quite sure how I hadn't run onto this recipe before, but it is truly AMAZING! I had bought the ingredients to make it for church last Sunday but it was cancelled due to inclement weather, well with apples in my house if they aren't used within the first day of purchase they wont be around long. My son has a great love for good Ol' Granny Smith. Luckily I whipped it up quickly enough my apples weren't snagged! Everyone in the house loved it!

  Yes, caramel apple snickers salad...

I used three large granny smith apples, washed and diced. I did leave the skin on to add nutrients and color! Three regular size snickers bars (and a few mini's I had in the candy container) also diced. One regular box of instant pudding, prepared with milk. One 8oz tub of regular cool whip and some Hershey's caramel sauce.

 ~Fold the cool whip into the prepared pudding, then fold in the apples and snickers. Once well combined drizzle with caramel sauce. (Yes once I dipped it out into serving containers, I drizzled a little more)! 

 **This recipe makes quite a bit, perfect for a crowd....a family or church gathering. But I was thinking of ways to make a single or double serving only? Single serve pudding cups! It would make the perfect amount for my little family and none to hang out in the fridge yelling my name!

....Bring snow showers!?! What? I've never heard that one before! I always thought it was...

Oh well, I guess old man winter didn't hear the poem correctly. I am, however, hoping this is the last bit for the season. Many people are saying they don't want to see anymore snow this year, but I'm sure by Christmas 2014 they will change their minds! (I would hope). We've been staying warm here at the cabin, and making spring plans. We managed to get out a few more times at the park and play a little t-ball in anticipation of the season starting soon. I have also been pinning like a crazy person, I did put a widget somewhere here on the blog, check it out!

 *Somewhere Over The Rainbow*

As you all know St. Patrick's Day is headed our way, and you know I just love holidays! I've created a fantastic (and easy) cupcake! Yes, it does take a little extra time, separating the cake mix to color it, but the effect is worth it!

 ~Make It At Home~

Prepare a box of white cake mix according to the package directions. Separate the mix evenly into six separate bowls, using paste or gel color each bowl a different color of the rainbow. I used AmeriColor. It takes very little coloring to reach the desired shade. I also put a dot of black with the purple to create a darker purple. (Make red, orange, yellow, green, blue and purple). Layer a spoonful of each color in the cupcake liner, beginning with the purple and working back. Bake as directed on the package. Color your favorite vanilla icing or homemade buttercream light blue and add a sour strap and gold coin. If you want clouds, mini-marshmallows are perfect! Enjoy! *Happy Birthday* To a wonderful children's author, Dr. Seuss. (Theodore Seuss Geisel) As a teacher I have found so much potential in his books and opportunities to learn. My son and I make these wonderful little Truffula Trees. Last school year I dressed up as The Lorax, we read the book and my entire class made them. ~Make It At Home (Or In The Classroom) I bought the pirouette cookie sticks, chocolate/vanilla icing and cotton candy. Just spoon a bit of icing on the top of the cookie and add your cotton candy. These are fun to make and delicious to eat.

I have put together a super cute set of cupcakes and would love to have someone also make some type of cake, cake pop, cookie or something fun to match and then have a giveaway. After having this chair for 26 years and being used by two children, I thought it was time to fix it up for my son. I hope you enjoy the before and after as much as I did!

*Refashioning the Old*

I finally finished up the rocking chair I used as a child.

Above: I had already taken the screws out! Look at the wear and tear of 26 years!

Below: The rocker portion, pretty decent shape after all this time!

But in desperate need of a makeover.

 I had to remove the upholstery and stuffing as well as sand it down!

After a few new folds of fabric, nice new dark stain, clear finish and a few rounds on the sewing machine....here is the finished product!

The finish is darker, but the flash brightened it up too much!

My son loves it so much!

Most of the time when it's not in use his stuffed animal toy dog, Charlie, sets here!

I have decided that it's time to show you my home. Many of you know that my family and I live in a cabin, prepare yourself it's VERY modest. It is our 'starter' home and maybe our future vacation home...I guess only time will tell. When we bought our home it was not 'pretty' enough to live in 24/7, so my parents, husband, brother and I made several changes. We have now settled in quite well and I wouldn't want to live anywhere else right now, it has been perfect for us!

 I'll begin with the least changed rooms then move onto the most changed rooms...

 The loft bedroom is also our 'master' bedroom.

 It's not huge but everything fits perfectly!

We didn't change anything, just added curtains and a few wall decorations.

  Our family room is also our TV room and our son's play area!

This is just one side of it, but I'll show more of it at the end of this post.

We also didn't change much here, just added some beautiful wall décor and the couch and rug!

  The one and only bathroom, yup that's how small our cabin is!

We changed the flooring, and we are planning to paint the walls this spring.

The butterfly curtain and rug have now changed, see what it looks like now at the end of the post!

  Our son's small bedroom...

We didn't do much in here except change the wall color, of which our son picked out!

  The eat in portion of the kitchen, so we'll call this space the dining area.

This room has the most change; notice the white door 'blinds' have been changed to brown curtains, the walls are no longer plaid and hunter green and the flooring is different!

  

Now my favorite part inside our home!

The kitchen is where I spend most of my time, this is the room that screamed potential before we bought the house.

For the size of the house the kitchen is HUGE, okay not massive but look how much cabinet space!

And yes they are custom cedar cabinet doors!

Hello! I hope everyone is staying warm and keeping Spring feelings in their hearts. Here at our house on Thursday, my husband realized I still hadn't taken down my "Let It Snow" sign above the hallway. He called me out on it and we took it down immediately, I guess there wasn't anything to it because we got two days of snow in a row! Luckily the day's are warming up nicely and melting most of it away. We are so ready for some sunshine and warmth, is anyone out there getting any?

  *Tangy Dinner*

After searching high and low on the internet I finally found a suitable sweet and sour sauce recipe. Of course I had to add and take away a few things with our low sodium and gluten free diet but boy did it turn out well! So good in fact that my parents are wanting the recipe already, and I only made it last night! As many of you know (that are on a low sodium or gluten free diet) it's HARD to find alternatives for your classic favorite dishes. I am slowly but surely alternating our old favorites into our new favorites. Click Here For The Recipe

If you LOVE or even like sweet and sour chicken or shrimp over rice then this recipe is for you!

I will even go as far as saying that you will have all you need in the pantry. White sugar, vinegar, ketchup, water, cornstarch and pineapple juice (I just used the juice from the pineapple I was going to use in the dish)! Combine the sugar, water, juice and vinegar in a sauce pot, bring to a low boil until sugar dissolves, in a separate bowl whisk together ketchup and cornstarch. After sugar dissolves add in the ketchup mixture and whisk until it thickens. Trust me it's a good one!

Not in the mood for Asian? What about something a little more American? Stuffed bell pepper soup...I know, you've made this before! But have you had it Low Sodium style? If you haven't, you are MISSING OUT! Instead of using a carton of full sodium beef or chicken stock switch it up with low sodium or no salt added, use a large can of salt free whole plum tomatoes and a few tablespoons of regular ketchup. It is so flavorful and GOOD FOR YOU! It wont raise your blood pressure or anything!  : ) *Sweet Dessert*

My son finally talked me into an apple sauce cake, I'm personally not a huge fan of sweets, especially since going "healthy" but he asked so much I said yes. I thought it's apple sauce, can't be too bad for you, I hope! Well we made it and he took two bites, he did however take some to his mamaw and papaw. They both loved it, so I guess it was good. I did just search for a recipe on here, I didn't make any alterations, it seemed like a very basic recipe.

*Back in the Kitchen*  I have been spending so much time with my little fella, with all this snow there hasn't been much school at all. I'm sure he's ready to send me off to work, but no such luck yet. But I am excited to say that with all the extra time at home, we have come up with several amazing low sodium recipes and I am so ready to share. Today I'll be posting the meat sauce recipe that I had mentioned in a previous post and my low sodium stuffed bell pepper soup recipe will be up soon! These are a few of the ingredients I used to make my pasta sauce! Salt Free Chili Powder Low Sodium Pasta Sauce (To go to the recipes just click on the title of each picture) *Celery Stalking* Have you ever grown your own celery? I haven't and I'm not even sure if it would grow from seed in my area. But I happened to run across an exciting experiment. I ended up reading about someone re-growing celery from the old stalks. When I purchase a large amount of celery I always cut it off and save it in the freezer for soups and stews. It just so happened that one of our local grocery stores had celery on sale for 99 cents a couple weeks back, giving me the opportunity to try the little experiment, and so far it's working out perfectly! We have been on this endeavor for about three weeks and so far we have been pleasantly surprised. It's been so much fun to "stalk" our celery!

 It's grown so much, we'll post more pictures in the next post. You will be surprised how much it's grown with water alone. I'm sure it will be ready for soil soon!
