Ingredients: 4 boneless, skinless chicken breasts. Salt and black pepper to taste. 2 tablespoons olive oil. 2 tablespoons unsalted butter. 2 cloves garlic, minced. 1 cup Chardonnay wine. 1 cup heavy cream. 2 tablespoons fresh tarragon leaves, chopped.
Instructions: Season chicken breasts with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook until golden brown, about 5-6 minutes per side. Remove chicken from skillet and set aside. In the same skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Pour Chardonnay wine into the skillet, scraping up any browned bits from the bottom. Let the wine simmer until reduced by half, about 5 minutes. Stir in heavy cream and chopped tarragon. Simmer until the sauce thickens slightly, about 2-3 minutes. Return the chicken breasts to the skillet, spooning the sauce over them. Continue to cook until the chicken is cooked through and the sauce is thickened, about 5-7 minutes. Serve the chicken with the Chardonnay cream sauce spooned over the top.
