What we need: • Leek • White asparagus • Carrots • Shallots • Black olives • Olive oil • Salt • Pepper • Fresh thyme • Red wine • Halibut fillet • Butter
How to do it First we are going to peel our asparagus and make sure you do it properly, otherwise it is hard to eat. Peeled asparagus is prepared to be cooked. In next step we cut some carrots and shallots to a small pieces. For a garnish we are going to be using leek, so we have to wash it with water and cut the green part of the leek it into strips. Now we have all vegetables prepared for making a poaching liquor so we mix our carrots, shallots and leek, add little bit of salt and pepper for the taste, also don’t forget a fresh thyme. And then pour red wine into our mixture and bring it to boil. In the meantime we will cook our asparagus and other half of the leek in salted boiling water for 4-7 minutes, depending how thick is your vegetables. Wine is boiling as well so we can put slowly our fish. Than we take it out of the heat and let 10-15 minutes cook, depending on your fish. Asparagus and leek are cooked and now we cut the asparagus into smaller portions (3 little pieces of each), mix them with little bit of olive oil and salt and let them marinate for while. Our leek we cut on quarters and we put the pieces on a very hot pan with a little bit olive oil to give it a nice brown color. Our fish is cooked. It is super soft and delicate so be careful guys while manipulate with it. You can put it in a tin foil so while doing a sauce from the red wine the fish stays warm.
Sauce: The rest of the wine we are going to reduce down. When it is nicely reduced, we gonna pass it through the sieve and press it to get all the juices from the vegetables out. Then put it back on the high heat and to get nice and thick consistency we add some butter. Mix well and we end up with shiny and nice wine sauce. The last thing left is to put it on the plate, I chose little more fancy way but guys, you can put it as you please. Enjoy!
