In this woodland the native Allium ursinum (wild garlic, ramsons, buckram, broad-leaved garlic, wood garlic, bear leek, bear’s garlic) was filling the air with a distinctive and pungent garlicky smell. This bulbous perennial has white flowers and broad leaves.

current best foraged kitchen staple is the garlic salt/powder made from dried fermented wild garlic which was too stringy to enjoy previously. it has this great complex but subtle umami flavor from fermentation on top of being a good powdered garlic. really you can’t go wrong with another way to add garlic to your dish. I love garlic.
