Ingredients: 1 lb boneless, skinless chicken breasts, cut into chunks. 2 bell peppers, sliced into chunks. 1 onion, sliced into chunks. 1/4 cup olive oil. 2 tablespoons lime juice. 2 cloves garlic, minced. 1 teaspoon chili powder. 1 teaspoon cumin. Salt and pepper to taste. 1/2 cup fresh cilantro leaves. 1/4 cup grated Parmesan cheese. 1/4 cup pine nuts. 1/4 cup olive oil. 1 clove garlic, minced. Salt and pepper to taste.
Instructions: In a bowl, combine olive oil, lime juice, minced garlic, chili powder, cumin, salt, and pepper. Add chicken chunks to the bowl and toss to coat.
