This cozy gnocchi dish is perfect for winter nights, featuring a creamy sage sauce and a medley of roasted vegetables. It's hearty, comforting, and bursting with flavor.
Ingredients: 1 lb gnocchi. 2 cups mixed winter vegetables such as Brussels sprouts, butternut squash, and carrots, diced. 2 tablespoons olive oil. Salt and pepper to taste. 2 tablespoons butter. 2 tablespoons all-purpose flour. 1 cup milk. 1/4 cup heavy cream. 1/4 cup grated Parmesan cheese. 2 tablespoons chopped fresh sage leaves. 1/4 teaspoon nutmeg.
Instructions: Get the oven ready by heating it up to 400F 200C. Add diced vegetables to a bowl and season with salt and pepper. Put the vegetables on a baking sheet and roast them for 20 to 25 minutes, or until they are soft and slightly caramelized. Follow the directions on the package to cook the gnocchi while the vegetables roast. Remove the water and set it aside. Melt the butter in a saucepan over medium-low heat. Add the flour and stir it in. Cook for one to two minutes, until the mixture turns a light golden color. Add the milk and heavy cream slowly while whisking the mixture. Keep stirring it until it gets thick. Cheese, sage, and nutmeg should be mixed in. Add pepper and salt to taste. Toss the cooked gnocchi and roasted vegetables around in the sauce after adding them to the saucepan. Serve right away, and if you want, top with more grated Parmesan and fresh sage leaves.
