Ingredients: 3-4 lbs pork shoulder roast. 1 cup apple cider. 1/2 cup chicken broth. 1/4 cup soy sauce. 1/4 cup brown sugar, packed. 1 onion, thinly sliced. 4 cloves garlic, minced. 1 tablespoon Dijon mustard. 1 teaspoon dried thyme. 1 teaspoon rosemary, chopped. 1/2 teaspoon black pepper. 2 tablespoons cornstarch for optional thickening. 2 tablespoons water for optional thickening.
Instructions: Put the roast pork shoulder in the crock pot. Apple cider, chicken broth, soy sauce, brown sugar, dijon mustard, dried thyme, chopped rosemary, and black pepper should all be mixed together in a bowl. Combine well. Spread the apple cider mix on top of the pork in the crockpot. Keep the lid on and cook on low for 7 to 8 hours, or until the pork is soft and can be shred with a fork. If you want the sauce to be thicker, you can make a slurry by mixing cornstarch and water. At the end of the cooking time, stir the slurry into the crockpot. After the pork is cooked, use two forks to shred it and mix it with the tasty sauce. You can put the Apple Cider Pork Roast in the crock pot and serve it over rice, mashed potatoes, or in sandwiches.
