This one was a fun recipe to make! Though next time I plan to make it without the cauliflower! Let me know what you think!
Ingredients: 1/4 cup unsalted butter 1/3 cup all-purpose flour 2 1/2 Cups milk or half & half 1/2 teaspoon sea salt 1/4 teaspoon ground black pepper 1/4 teaspoon paprika 1 teaspoon onion powder 1 Tablespoon dry mustard powder Pinch cayenne pepper 8 Ounces Vermont sharp white cheddar cheese Package frozen spinach (thawed and drained) Green food coloring (optional, but DO IIIITTTT) 1 Pound box pasta, cooked and drained 1 head fresh caulflower (steamed)
Instructions Get your dutch oven out and melt your butter over medium heat Then add your flour to make a thick paste Next add your milk and stir/whisk until all the chunks from the previous mixture are gone. Add salt, pepper, paprika, onion powder, mustard powder, and cayenne pepper and mix it really good. Once it starts simmering, add your cheese and stir until the cheese is melted Now its time to add the spinach and food coloring! Mix that in really well. Then you need to add in the pasta noodles and mix those in. Last but not least, add the cauliflower, try to have bigger chunks/heads, and mix it in really well. Serve with cajun powder for an added spice!
