Ingredients: 200g almond flour. 200g powdered sugar. 3 large egg whites. 1/4 tsp cream of tartar. 100g granulated sugar. 1/2 tsp violet extract. Purple food coloring optional. Violet macaron filling e.g., violet buttercream or violet ganache.
Instructions: Preheat your oven to 300F 150C. Line a baking sheet with parchment paper or a silicone baking mat. In a food processor, combine the almond flour and powdered sugar. Pulse until well combined and fine in texture. Sift the mixture into a large mixing bowl to remove any lumps. In a separate mixing bowl, beat the egg whites until they become foamy. Add the cream of tartar and continue to beat. Gradually add the granulated sugar while continuing to beat until stiff peaks form. If desired, add a few drops of violet food coloring for a deeper color. Carefully fold the almond flour mixture into the egg white mixture, using a spatula. Be gentle to maintain the macaron batter's volume. Add violet extract and continue folding until the batter is smooth and flows like lava. Transfer the macaron batter into a piping bag fitted with a round tip. Pipe small rounds of batter onto the prepared baking sheet, leaving some space between each one. Tap the baking sheet on the counter a few times to remove air bubbles. Let the piped macarons sit at room temperature for about 20-30 minutes, or until a skin forms on the surface and they are no longer sticky to the touch. Bake in the preheated oven for 15-18 minutes, or until the macarons have developed feet and are set. Rotate the baking sheet halfway through baking. Remove from the oven and let the macarons cool completely on the baking sheet. Once cool, carefully remove them from the parchment paper or baking mat. Match up macaron shells of similar size and spread violet macaron filling on one half of each pair. Gently sandwich the macarons together, creating violet macaroon sandwiches.
