Ingredients: 4 large carrots, peeled and thinly sliced into ribbons. 1 cup edamame, cooked and shelled. 2 ripe avocados, diced. 2 tablespoons black sesame seeds. 1 tablespoon fresh ginger, grated. Zest and juice of 2 citrus fruits e.g., oranges, grapefruits. 2 tablespoons extra-virgin olive oil. Salt and pepper to taste. Fresh cilantro leaves for garnish.
Instructions: In a large mixing bowl, combine the carrot ribbons, edamame, and diced avocado. In a separate small bowl, whisk together the grated ginger, citrus zest, citrus juice, and extra-virgin olive oil to make the dressing. Season with salt and pepper to taste. Pour the dressing over the carrot, edamame, and avocado mixture. Toss gently to coat all the ingredients evenly. Sprinkle black sesame seeds over the salad.
