These Veggie Sliders with Blackberry BBQ Sauce are a tasty take on regular sliders. They are made with tasty black bean and quinoa patties and a tangy homemade blackberry BBQ sauce on top. Great for a quick and tasty meal or as an appetizer at a party!
Ingredients: 12 slider buns. 2 cups cooked black beans, mashed. 1 cup cooked quinoa. 1 small onion, finely chopped. 2 cloves garlic, minced. 1 teaspoon cumin. 1 teaspoon paprika. Salt and pepper to taste. 1 cup blackberries. 1/2 cup ketchup. 2 tablespoons apple cider vinegar. 2 tablespoons maple syrup. 1 tablespoon soy sauce. 1 tablespoon olive oil.
Instructions: In a large bowl, combine mashed black beans, cooked quinoa, chopped onion, minced garlic, cumin, paprika, salt, and pepper. Mix well. Form the mixture into small patties, about the size of the slider buns. In a saucepan, heat olive oil over medium heat. Add blackberries and cook until they start to break down, about 5 minutes. Add ketchup, apple cider vinegar, maple syrup, and soy sauce to the saucepan. Stir to combine. Reduce heat to low and let the sauce simmer for about 10 minutes, until it thickens. Grill or pan-fry the veggie patties until golden brown and cooked through, about 3-4 minutes per side. Assemble the sliders by placing a veggie patty on each bun and topping with a spoonful of blackberry BBQ sauce. Serve immediately and enjoy!
