With this simple slow cooker recipe, you can make sofritos at home that taste just like the ones at Chipotle. This braised tofu dish is full of flavor and goes well with rice, burritos, or bowls. It's great for vegans and vegetarians.
Ingredients: 1 package extra-firm tofu, drained and cubed. 1 tablespoon olive oil. 1 onion, diced. 3 cloves garlic, minced. 1 red bell pepper, diced. 1 jalapeo pepper, seeded and diced. 1 tablespoon tomato paste. 1 tablespoon chili powder. 1 teaspoon ground cumin. 1 teaspoon dried oregano. 1/2 teaspoon paprika. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 cup vegetable broth. 2 tablespoons lime juice. 2 tablespoons chopped cilantro.
Instructions: Put olive oil in a pan and heat it over medium-low heat. Put in the garlic, red bell pepper, onion, and jalapeo pepper. Cook until it gets soft. Add chili powder, cumin, oregano, paprika, salt, and black pepper, and mix well. Keep cooking for one more minute. Put the mixture in a slow cooker. Put in the lime juice, tofu cubes, and vegetable broth. Use a stir to mix. Put the lid on top and cook on low for 4 to 6 hours or high for 2 to 3 hours, until the tofu is soft and the flavors are well mixed. Cut up some cilantro and stir it in before serving. Put it in burritos, bowls, or over rice.
