This Vegan Red Lentil Hummus Dip is a flavorful twist on the classic hummus. It's creamy, rich, and packed with protein and fiber from the red lentils. Perfect as a dip for veggies or spread on sandwiches!
Ingredients: 1 cup red lentils. 3 cloves garlic, minced. 1/4 cup tahini. 1/4 cup lemon juice. 1/4 cup olive oil. 1 teaspoon ground cumin. 1/2 teaspoon paprika. Salt to taste. Water, as needed.
Instructions: Rinse the red lentils thoroughly under cold water. In a pot, bring 2 cups of water to a boil. Add the rinsed lentils and cook until tender, about 10-15 minutes. Drain any excess water from the cooked lentils and let them cool slightly. In a food processor, combine the cooked lentils, minced garlic, tahini, lemon juice, olive oil, ground cumin, paprika, and a pinch of salt. Blend until smooth, adding water as needed to achieve your desired consistency. Taste and adjust seasoning if necessary. Transfer the hummus to a serving bowl and drizzle with a little extra olive oil and sprinkle with paprika for garnish, if desired. Serve with fresh vegetables, pita bread, or crackers.
