This feautures our insane chickpea and artichoke tuna with nori flakes to bring out all the flavors of a day at the beach, mayo, onion and mustard served on our buttery soft toasted Jamaican Hard Dough Bread (made this morning, no less). Bread and butter pickles, lettuce and juicy tomato seal the deal. Like, for real, these pickles are no joke, Doc. That's for lunch, dahling. Dahling, this is the picture that launched a thousand smiles. This was our very first Chick'n Biscuit sammich eveeeeer. We were testing it out back in July, back when Alex (@weekendrepairsorlando) and I were the only 2 people working at the cafe. We thought "we got this". I mean, we really thought just the two of us could manage this tiny vegan cafe in an out of the way gas station, and there would even be days one of us could get a day off. Ha! Holy Irie crazy dreams, dahling, what were we thinking?! Exactly 17 minutes after posting this pic, we sold out of our first batch of Chick'n Biscuits. We made 2 more batches, then called it a day. One Irie friend drove from Davenport to get a biscuit but we were all sold out. What did we do? We asked her to sit and chat with us for 20 minutes while we made her a new batch. Alex and I looked at each other wondering what on earth we got ourselves into. Neither of us had ever worked in a kitchen prior to that but you, dahling, were the perfect teacher.
