This is a vegan version of the traditional Jamaican spiced bun that is great for Easter or any other time of the year.
Ingredients: 3 cups all-purpose flour. 1 cup dark brown sugar. 1 tsp baking powder. 1 tsp baking soda. 1 tsp ground cinnamon. 1/2 tsp ground nutmeg. 1/2 tsp ground allspice. 1/2 tsp ground ginger. 1/2 cup vegan margarine. 1 cup soy milk. 1/4 cup molasses. 1/4 cup maple syrup. 1/4 cup raisins.
Instructions: Preheat oven to 350F 175C and grease a loaf pan. In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg, allspice, and ginger. Cut in vegan margarine until mixture resembles coarse crumbs. Stir in soy milk, molasses, and maple syrup until just moistened. Fold in raisins. Pour batter into prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan for 10 minutes, then remove from pan and cool completely on a wire rack.
