Ingredients: 3 tablespoons unflavored gelatin. 1 cup cold water, divided. 2 cups granulated sugar. 1/2 cup light corn syrup. 1/4 teaspoon salt. 2 teaspoons vanilla extract. 1/2 cup powdered sugar for dusting. 1/2 cup cornstarch for dusting. 4 ounces semi-sweet chocolate, chopped. 1 tablespoon unsalted butter.
Instructions: Sprinkle the gelatin over half a cup of cold water in a mixing bowl. Give it ten minutes or so to soften. The granulated sugar, corn syrup, salt, and the remaining 1/2 cup of water should all be combined in a medium saucepan. Stirring constantly, cook over medium heat until the sugar dissolves. After the ingredients are dissolved, turn up the heat to high and let the mixture boil without stirring. To reach the soft-ball stage, cook the mixture at 240F using a candy thermometer. Pour the hot sugar syrup gradually into the softened gelatin, using an electric mixer on low speed to mix. After a few minutes, raise the speed to high and continue beating until the mixture turns very thick and white. In the final minute of mixing, add the vanilla extract. In the meantime, mix the cornstarch and powdered sugar together in a different bowl. Dust the 9x9-inch baking pan with a generous amount of the cornstarch and powdered sugar mixture after greasing it. Using a greased spatula, smooth the top of the thick marshmallow mixture after pouring it into the prepared pan. Sprinkle additional powdered sugar and cornstarch mixture on top. Allow it to settle for four hours or overnight at room temperature. After the marshmallows harden, take them out of the pan and slice them into squares or other shapes you desire. Melt the butter and chopped chocolate in 20-second increments in a microwave-safe bowl, stirring until smooth. Over the marshmallows, pour the melted chocolate.
