Ingredients: 2 cups raw cashews. 2 tablespoons coconut oil. 2 tablespoons curry powder. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. 1/4 teaspoon cayenne pepper. 1/4 cup shredded coconut. Salt to taste.
Instructions: Preheat oven to 350F 175C. In a mixing bowl, toss cashews with coconut oil until evenly coated. Add curry powder, garlic powder, onion powder, cayenne pepper, shredded coconut, and salt. Mix well. Spread cashew mixture onto a baking sheet lined with parchment paper in a single layer. Roast in the preheated oven for 10-12 minutes, stirring halfway through, until cashews are golden and fragrant. Remove from oven and let cool completely before serving or storing in an airtight container.
